Known as the ‘loyal friend’, it’s an extremely versatile fish, found in countless recipes, be they simple or complex.
The Portuguese codfish is very different from the fresh cod served all over the world thanks to its salt cure. This fish requires some preparation, so if you’ve never cooked with it before, ask the fish mongers at the counter for some advice!
The history of salted cod dates back to the 16th century, during the Age of Discovery, when Portuguese sailors used salt to preserve the fish. Since then, bacalhau has earned a permanent place at our tables and has become a national symbol.
